Popeye’s Simple & Healthy Chicken Marsala

It’s another weeknight and you’ve finally returned home from work, it’s very likely that you’re asking yourself….”what’s for dinner?” Well we all know that chicken is always in season. And who doesn’t love the classic Southern Italian dish, made with rich Marsala wine? I named this recipe Popeye’s because I’ve included a healthy dose of my favorite superfood, spinach (strong to the finish). In addition, I’ve substituted regular all-purpose flour for almond flour and omitted the butter traditionally used in this dish. It’s easy to make, very healthy and oh-so delicious….

INGREDIENTS:
1/4 Cup Almond Flour
1/2 Teaspoon Sea Salt
1/2 Teaspoon Ground Black Pepper
1/2 Teaspoon Dried Oregano
4 Boneless, Skinless Chicken Breasts
3 Tablespoons Olive Oil
2 Cups Baby Bella Mushrooms, Sliced
3/4 Cup Marsala Wine
2 Cups Fresh Spinach, Chopped

RECIPE:
In a small bowl mix together the almond flour, sea salt, black pepper and dried oregano. Lightly coat each chicken breast with the flour mixture. Next, heat 2 TBSP olive oil in a large pan over medium-high heat. Place the chicken in the pan and lightly brown both sides, about 3-5 minutes on each. Remove the chicken from the pan and set aside. Add 1 TBSP olive oil to the same pan, then add the mushrooms. Saute uncovered for about 5 minutes or until the mushrooms are tender and browned. Add the Marsala wine and stir. Next, mix in the spinach and simmer for 5 minutes until the sauce thickens. Pour the Marsala sauce over the chicken, serve with a side of brown rice and mangia (eat)!
